Two friends and a lucky idea

How a safety-harbor pop-up became downtown St. Pete’s favorite little hotel-lobby coffee bar.

Lucky Cup Coffee Co. is the work of two best friends, April and Lauren. April first poured Lucky Cup as a pop-up back in 2019, and the two of them spent a couple of years planning a place of their own.

When the Galaxy Hotel came looking for a café, the pieces fell into place. Lucky Cup softly opened in its lobby in the summer of 2025. Lauren shaped the brand and does the baking; April runs the bar.

What we care about is simple: creative drinks, breakfast made fresh every morning, dairy-free cold foam on everything, and a corner of downtown where you actually want to sit a while.

I felt like people in hotels really want coffee and breakfast items. So we were like, what if we did coffee instead?
